Western Cake
Chocolate cake with chocolate icing made in a jelly roll pan.
ingredients
- Cake:
- 2 cups all purpose flour
- 2 cups granulated sugar
- 2 sticks butter
- 1/4 Cup cocoa
- 1 Cup water
- 2 eggs
- 1tsp. Baking soda
- 1 tsp. Vanilla flavoring
- 1/2 cup buttermilk
- Frosting:
- 1 stick butter or margarine
- 1/4 cup cocoa
- 6 Tbsp. Milk
- 1 box powdered sugar (1lb)
- 1 tsp. Vanilla flavoring
- 1 cup pecans, cut into small pieces.

In mixing bowl combine flour and sugar

In saucepan, bring to a boil butter cocoa & water.

Pour liquid mixture into bowl with sugar/flour. Mix well with electric mixer.

Add eggs, baking soda, vanilla, & buttermilk.

Pour into a greased jelly roll cake pan.

Bake at 400 for 20 minutes.

While still warm this cake should be frosted.

Combine butter, cocoa and milk into a pan and heat to boiling. Remove from heat and mix in sugar, nuts and vanilla, thoroughly. Spread on warm cake.

Excellent served warm or at room temperature with vanilla ice cream.
