Broccoli Rice Au Gratin

ingredients

  • 4 Tbsp butter or margarine
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2(10 oz.) pkgs. frozen chopped broccoli, cooked
  • 1 (10-3/4 oz.) can condensed cream of mushroom or cream of chicken soup
  • 1 small jar Cheez-Whiz
  • 1 (5 oz.) can water chestnuts (optional)
  • 2 cups cooked rice

directions

Melt butter in skillet or large saucepan. Sauté onion and celery in butter until clear. Add broccoli, soup, Cheez Whiz, drained water chestnuts and rice and mix thoroughly. Pour into butter 2 quart casserole and bake at 350° 25 to 30 minutes. May be made in advance and refrigerated or frozen until ready to cook. Allow 45 minutes to 1 hour baking time if casserole is chilled or frozen.

*This is an excellent side dish to serve with poultry or ham. As an added bonus it can be made in advance and refrigerated or frozen before baking.
