Quick Salmon Patties With Lemon Caper Mayonnaise
the lemon caper mayo is awesome
ingredients
- 2 - 7oz cans red salmon(leftover cooked salmon is even better)
- 1 tbsp Chopped fresh parsley
- 2 green onions
- 1 stalk of celery
- 1 cup dry breadcrumbs
- 1 tsp of lemon pepper or pepper
- 1/2 tsp salt
- 2 eggs beaten
- 1 cup dry breadcrumbs
- 2 tsp veggie oil
- 2 tsp butter
- lemon caper dressing
- 1/2 cup of mayo
- 2 tbsp of fresh lemon juice
- 1 tbsp small capers
- 1 tbsp of fresh or dried dill
- dash of cayenne pepper
directions
drain salmon, place in bowl and flake with fork. add onion , parsley, celery, bread crumbs, lemon pepper, salt and eggs,blend well.Divide into 4 -6 balls and and roll in bread crumbs, flatten into patties. In a large frying pan heat oil and butter over medium heat. Cook patties turning only once, until crisp and golden. Lemon caper dressing, is made by combining all ingredients cover and refrigerate until serving.
