Cream of Pumpkin Soup
Katie’s favorite. Also a hit with Arnold’s friends.
ingredients
- 2 tbsp Olive Oil
- 4 tbsp Onion chopped
- 2 tbsp Celery chopped
- 2 tbsp Carrots chopped
- 2 tbsp leeks chopped
- 1 tbsp Garlic
- 350 grams Pumpkin cubed
- 1 liter Chicken stock
- 3 tbsp Flour
- 50 ml White Wine (optional)
- 175 ml Cream
- salt to taste
- White Pepper to taste
directions

heat up olive oil

saute onion, celery, leeks, carrots and garlic

add pumpkin

dust with flour

deglaze with white wine

add stock

bring to boil and simmer until pumpkin is cooked

Puree soup in a blender

Bring back to simmer.

Add cream

season with salt and pepper
