Penne alla Vodka
ingredients
- 1 pound penne or ziti
- 3 tablespoons olive oil
- 1/2 cup finely chopped shallots
- 2 tablespoons minced garlic
- 1 (28 oz) can peeled, crushed tomatoes, chopped and liquid
- 1/2 teaspoon crushed pepper flakes
- 3/4 cup pepper vodka
- 1/2 cup heavy cream
- Chopped basil leaves as garnish
- Pecorino cheese

In large pot of salted water cook pasta until just al dente, 8 to 10 minutes. Drain and return to pot. Cover to keep warm.

Meanwhile, in a large saute pan, heat olive oil over medium-high heat. Add shallots and garlic. Cook, stirring until soft (about 2 minutes). Add tomatoes and pepper flakes and cook, stirring, until thickened, 4 to 5 minutes. Add vodka and cook until reduced, about 5 minutes. Add cream and cook until thickened. Remove from heat and adjust seasoning.

Add the cooked pasta to sauce and toss.

Transfer to a large serving bowl and garnish with basil and top with sprinkling of cheese.
