Carrot Cake

I was given this recipe my our landlord, Nila Turner, right after we were married.

Carrot Cake
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 8 oz pkg cream cheese, softened
  • 1 lb powdered sugar
  • 1 stick butter
  • 2 tsp vanilla
  • 1 cup coconut
  • 1/2 cup pecans, finely chopped

    Preheat oven to 350 degrees.

    Mix together dry ingredients. Add oil and mix well. Add eggs one at a time, and beat after each one. Add carrots, beat well. Pour into buttered and floured pan. Bake 45-60 minutes until toothpick inserted in center comes out clean. Cool

    Mix together cream cheese, powdered sugar, butter, and vanilla until creamy. Stir in coconut and nuts and mix well. Spread on cooled cake.
