Coconut Chicken Curry Soup
ingredients
- Olive oil
- 1/2 medium onion, sliced thin
- 2 c chicken broth
- 14 oz. unsweetened coconut milk
- 1 1/2 tsp curry powder
- 1 jalapeno chili, seeded and diced
- 3 chicken breasts, uncooked
- 2 tbsp fresh lime juice
- 1 sm. red bell pepper, sliced thin
- 1/2 chopped green onion
- 1/2 c. chopped cilantro
- 1/2 c. shredded coconut
- 1 c cooked jasmine rice
directions
Heat oil in a medium pan. Saute onions until tender. Add chicken broth, coconut milk, curry powder and chili. Bring to a simmer over medium heat. Add chicken and simmer until chicken is just cooked through, stirring occasionally. Remove chicken, shred, and replace. Add bell pepper and simmer an additional 5 mintutes. Mix in lime juice. Season with salt and pepper. Spoon rice into each bowl. Ladle soup over. Sprinkle cilantro, coconut, and green onions over top and serve.
