Asian Nachos

I got this recipe from my sister in law Jodi. It’s fantastic! Everyone who tries it loves it!

ingredients

  • Won ton wrappers (lightly toasted under oven broiler)
  • Chicken 2 to 3 cups (cooked and shredded)
  • Rice 2 or 3 cups cooked (brown or white)
  • Black beans (half can) heated
  • Corn (half can) heated
  • Carrot (Shredded)
  • Mushrooms (Sliced)
  • Peanut Sauce (to drizzle atop)
  • Mozzarella Cheese
  • Peanut Sauce:
  • 1/4 cup Sugar
  • 1/4 cup Peanut Butter
  • 3 TBSP Soy Sauce
  • 3 TBSP Water
  • 2 TBSP Vegetable Oil
  • 1 tsp Minced Garlic

    Heat all ingredients for peanut sauce until the sugar is dissolved, stirring frequently - will start to thicken. Set aside.

    Rinse beans, drain corn and mix with cooked rice.

    Around outside edge of a place arrange wontons, place rice, corn and beans in the center. Spread shredded chicken around wontons and rice mixture.

    Top with fresh shredded carrot and sliced mushrooms. Add shredded mozzarella to top and then drizzle with peanut sauce. Microwave 2 minutes or toast under the oven broiler.

Prepare the chicken, rice and wontons ahead of time for a fast dinner. Peanut sauce tastes better fresh and does not take very long to make.
