Salsa-Roasted Salmon
Quick, easy and fantastic!
ingredients
- 1 medium Tomato, chopped
- 1/2 small Onion, chopped
- 1 clove garlic, peeled and quartered
- 1 small Jalapeno Pepper, seeded and chopped
- 1 tsp. Cider Vinegar
- 1/2 tsp. Chili Powder
- 1/4 tsp. Ground Cumin
- 1/4 tsp. Salt
- 3 dashes of Hot Sauce
- 8 oz. center-cut Salmon Fillets

Preheat oven to 400 degrees.

Place tomatoes, onions, garlic, jalapeno, vinegar, chili powder, cumin, salt and hot sauce into food precessor; process unitl finely chopped and uniform.

Place salmon in a medium roasting pan, spoon salsa over salmon. Roast until salmon is cooked through, 12 to 15 minutes.
