Potato Leek Soup
This is a delicious, hearty soup that really warms the heart!
ingredients
- 2 tablespoons butter
- 1 large onion, chopped
- 2 leeks, cleaned & chopped
- (remove dark green section)
- 2 tablespoons flour
- 4 cups vegetable stock
- 4 medium yukon gold potatoes
- (about 2 lbs), peeled & cubed
- 3/4 cup low fat milk
- salt & pepper to taste

Melt butter in a large saucepan over medium heat. Add onions and leeks, and sauté gently until soft. Stir in flour and cook for 2 minutes. Gradually stir in stock.

Add potatoes, bring to a boil and then cover and simmer gently for 30-40 minutes or until potatoes are soft. Stir in milk and season with salt and pepper.

Puree soup in a blender (or use immersion blender) to desired consistency.
