Babie's Passover Matzoh Latke

- 2 eggs
- 1 tablespoon salt
- 1/2 cup of Manischewitz wine
- 2 cups of water
- 1 cup of matzoh meal
- 1/4 cup of oil

In a large bowl, mix eggs, salt, wine, and water. Slowly add the matzoh meal and continue mixing until smooth, but not too smooth, and not too thick! If too thick, add water. If too thin, add more matzoh meal.

Heat the oil in a frying pan. Using a large cooking spoon, drop spoonfuls of the matzoh meal mixture into the frying pan forming oval latkes. When the latkes begin to brown, turn them over and brown on the other side. Remove the latkes and place on a plate covered with paper towel to drain off the excess oil. Serve with sugar or applesauce. Makes 8-10 latkes.
