SPINACH PINWHEELS

Easy and festive! Be sure it is thawed before rolling! Can freeze after cutting into rounds. Just defrost a few minutes before baking!

ingredients

  • 1 10oz pkg of frozen spinach -thawed and squeezed dry.
  • 4 T smart balance margarine
  • 1 cup sliced mushrooms, fresh
  • 4 oz Gruyere cheese, grated or Swiss
  • 17 oz box puff pastry, thawed(2 sheets)

    Drain spinach really well squeezing out ALL moisture. Use paper towels if necessary.

    Melt 2 T Smart balance in skillet saute mushrooms 5 minutes. In a bowl-stir together spinach and mushrooms and cheese set aside.Roll one pastry sheet into an 11 by 13 rectangle..Brush with1/2 of the melted margarine Spread half the spinach mixture over pastry -top with half the cheese. Roll up jelly roll fashion starting with the long side. Repeat with other pastry sheet.(you can wrap in plastic wrap and refrigerate up to 2 days if necessary.)

    Cut rolls into 1/4 inch slices. Place on lightly sprayed cookie sheets and bake at 350 degrees 15 to 20 minutes or until golden.

You can also use artichokes, cream cheese, black olives,,sun dried tomatoes,anything is great in these!
