Salmon Cakes
ingredients
- 1 lb cooked Alaskan Salmon fillets
- 3/4 cup seasoned dried bread crumbs
- 1/2 cup minced scallions
- 1 tsp grated fresh ginger
- 3 egg whites
- 2 tsp Dijon mustard
- 1/4 tsp black pepper
- 2 tsp corn oil

In medium bowl, combine salmon, bread crumbs, scallions, ginger, egg whites, mustard and pepper, mixing well. Form into 4 cakes.

In large nonstick skillet, heat oil over medium-high heat. Reduce heat to medium, and saute cakes about 4 minutes on each side.
