Homemade Oreos

The name says it all! Grab a glass of milk!

ingredients

Chocolate Wafers
  • 1 1/4 c Flour
  • 1/2 c Dutch Process Cocoa
  • 1 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 c Sugar
  • 1 1/4 sticks Unsalted Butter, soft
  • 1 Egg
Filling
  • 1/2 stick Unsalted Butter, soft
  • 1/4 c Shortening
  • 2 c sifted Confectioners Sugar
  • 2 tsp Vanilla Extract

    Preheat oven to 375 degrees.

    Mix flour, cocoa, baking soda, baking powder, salt and sugar in mixer or food processor. On low speed (or pulsing) add butter then egg. Continue mixing or processing until dough comes together in a mass.

    Take rounded teaspoons of batter and place on parchment lined baking sheets about 2 inches apart.

    With moist hands slightly flatten dough. Bake about 9 minus, rotating baking sheets. Allow to cool.

    To make filling, mix butter and shortening on low speed, gradually beat in sugar and vanilla. Turn mixer on high and beat for 2-3 mins until filling is light and fluffy.

    To assemble cookies. Fill pasty bag or sandwich bag with filling. Pipe tsp size blobs on center of one cookie. Place another cookie on top and press lightly, working filling to edges.
