My Flank Steak
This was a recipe I made up while in college, hanging out with a girlfriend after finals.
ingredients
- 3 pieces of bacon
- 1 1/2 lb. flank steak with pocket cut into side
- FILLING:
- Lots of garlic
- 1 leek, chopped
- 6 water chestnuts diced
- 6 mushrooms, diced
- salt & cayenne pepper
- dash red wine vinegar
- bunch of chopped parsley
- dash red wine
- olive oil
- MARINADE: (to feel, no measurements)
- ketchup
- red wine vinegar
- garlic
- cayenne pepper
- dijon mustard
- worchestershire sauce
- sesame seed oil
- soy sauce
- olive oil

Throw together marinade ingredients to taste.

FILLING:

Saute garlic in olive oil til golden. Add sliced leeks, mushrooms, parsley and water chestnuts. While sauteing, add red wine and red wine vinegar. Salt and pepper to taste. Set aside.

ASSEMBLE:

Fill flank steak, sewing up the sides. Roll into round, tie string around. Place in baking pan. Cover top with bacon, allowing bacon to reach the pan. Baste with marinade.

Bake for 1 1/2 hours in a 375 degree oven.
