Chicken with Green Olives
ingredients
- 1 T. lemon zest
- 1/3 cup fresh lemon juice
- 2 T. olive oil
- 1/4 cup chopped herbs(thyme,basil,ect)
- one 3 1/2-pond frier chicken
- 25 garlic cloves, peeled
- 3/4 cup chix broth
- 1/3 cup pitted green olives, rinsed
- salt and pepper

in a small bowl, combine lemon zest and juice, olive oil, herbs, salt and pepper. Stir to combine

Preheat oven to 425. Arrange the chicken pieces in a roasting pan and pour the lemon mixture over. Arrange the garlic all around the chicken, stirring them to coat with the mixture. Roast for 40 minutes

Remove chicken from the oven. Add the broth to the pan and place on top of the stove on med-high heat. Stir to scrape up browned bits from the bottom of the pan. Add olives and stir, cook a few min to heat the olives all the way through
