Black beans and rice
ingredients
- 1 tablespoon of olive oil
- 1 cup of chopped onion
- 1 cup of chopped green bell pepper
- 2cups of cooked rice
- 1 can (10 oz) of Rotel diced tomatoes and green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon of ground cumin
- 1/4 teaspoon of coriander
directions
Heat oil in a large skillet. Saute onion and pepper until tender, about 5 minutes. Stir in remaining ingredients and heat thoroughly. Makes 6 servings.
