Sesame Noodles with Chicken
ingredients
- 1 8.8 oz bag of soba noodles
- 5 tablespoons low-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon sesame oil
- 2 tsp honey
- 2 tsp honey mustard
- 1 tablespoon peanut butter (creamy is best)
- 3/4 pound boneless, skinless chicken breast
- 5 scallions, green and white, thinly sliced
- 1 medium mango, sliced (optional)

Cook noodles according to package directions.

In a large bowl whisk together next 6 ingredients to make dressing. Set aside.

Wrap chicken loosely in microwave proof plastic wrap. Microwave on high for 3 minutes or until chicken is cooked through. Let stand until cool enough to handle, then hand shred and add to the peanut mixture.

Mix in drained soba noodles, scallions and mango. Toss until combined.
