Bran and Berry Muffins
Deliciously healthy for you, and even the little ones wouldn’t know it. The typical Bran Muffin gets a lift with a fresh mix of Wild Berries.
ingredients
- You’ll Need:
- 1 Cup Wheat Bran
- 1 and 1/2 Cups Whole Wheat Flour
- 1/2 Cup Mixed Frozen Berries (Blueberries, Raspberries, and Cranberries)
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 3/4 Cup Milk
- 1/2 Cup Honey
- 2 Tablespoons Light Oil
- 1 Egg, Beaten
- 1/4 Cup Walnuts, Chopped

Preheat oven to 400 degrees F.

Stir all the dry ingredients together in a medium bowl.

Stir all the wet ingredients together in another bowl.

Once both are well incorporated, mix the dry into the wet stirring well.

Add the nuts and the berries, and gently fold into the batter.

Spoon into greased muffin tins, and bake for 15 minutes or until cooked through.

Serve warm with butter.

Using Frozen Berries instead of fresh, assures that the fruit doesn't sink to the bottom.
