A quick way to make a portable pizza that tastes way better then those frozen ones.One of the things that’s number one besides the fillings is the crust for me- its gotta be crunchy but light and spongy. This ones oneof the best, but also try Rapini and Mozzarella with Garlic! Yumm

ingredients

  • 1 Ball of White or Whole Wheat Pizza Dough
  • Flour
  • Cornmeal
  • 1 Large Roasted Eggplant
  • 2 Roasted Peppers(Red and Yellow are my favourites)
  • 6 Mushrooms, Sliced
  • 100 Grams Hot Genoa Salami, Sliced thin
  • 4 Tblspoons Fresh Tomato Sauce
  • 4 Whole Fresh Basil Leaves
  • 4 Slices Provalone Cheese
  • 4 Thick Slices Mozzarella Cheese

    Preheat the Oven to as high as it goes. For mine that would be 500 degrees F.

    Sprinkle Flour and Cornmeal onto a clean counter and take the fresh dough ball out of the bag, and onto the Flour mixture.

    With your rolling pin, roll out the dough until thin. With a knife, cut the sheet of dough in half, and seperate.

    Next take your Sauce and spoon it into the middle of each sheet.

    Spoon the Roasted Eggplant, Roasted Peppers, Mushrooms, Salami, Basil Leaves and 2 Slices of each Cheese.

    Drizzle a tiny bit of Olive Oil on top, and with a brush, put very little Oil on the edges of the dough. Fold over the top piece of dough and pinch the two edges together tight. If you don’t, all the cheese and sauce will come out and burn. Cut 3 short slits on top and brush the top with more Oil. Sprinkle Oregano on top if you wish.

    *To make it easier for you, move the dough without the toppings onto the stone you will bake them on. If you do it after you make the calzone, it might be a bit tricky to carry itover without puncturing the thin dough.

    Bake in the really hot oven for about 15 Minutes. It may take longer or shorter depending on how thin or thick you rolled out your dough.

    Serve right out of the oven.

See page for the recipe on Roasted Peppers. To make the Eggplant, simply wash, cut length-wise, drizzle Olive Oil on the meat and pop into oven at a high heat until the Eggplant is soft and delicious. Then scoop out and let cool.
