Cali-Italia Pizza
After I saw this pizza I went nuts to find the recipe. I finally gave up, and made my own. Hopefully its as good as the real thing, created by Tony Gemingnani at Food Networks Pizza Battle.

- 1 Ready made Pizza Dough
- Flour for Kneading Pizza
- 1 Fresh Buffalo Mozzarella, Grated
- 7 Ounces Italian Gorgonzola, Dime- Sized
- Handful Italian Asiago, Shaved
- 12 Teaspoons Sweet Fig Preserve
- 4 Tableespoons Real Parmagiano Reggiano, grated
- 100 Grams Prosciutto di Parma, Cut into Strips
- Aged Balsamic Vinegar from Modena

Stretch out the dough into 12- inch circle.

Preheat Oven to 550 degrees F, or the highest it will go.

Add Mozzarella, Gorgonzola, and Asiago, on top of the dough, leaving a border. Slide into the pizza stone, and bake for 8 to 10 minutes or until golden brown.

Remove from heat and dollop the sweet Fig Preserve, then the Parmagiano, and prodciutto. Lightly shower (I like spraying) the Pizza with the Balsamic Vinegar. Slice into 8 slices.
