White Bean Chicken Chili
Another quick, easy, and yummy recipe from Liz Diamond
ingredients
- 1 medium onion, chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 8 boneless chicken breasts cut into bite size pieces (can use alternative meat)
- 3 cups water
- 1 teaspoon salt,pepper, chili powder, dried oregano
- 2 teaspoons group cumin
- 4 cans of Northern beans, rinsed, drained, and divided
- 1 can chicken broth
- 1 package of frozen white corn
- 1 can or Rotelle (tomatoes and green chiles)
- 3 tablespoons lime juice

Saute chopped onion in hot oil in a large Dutch oven over medium heat for 7 min., add garlic, and saute 2 additional min

Stir in chicken pieces, and cook, stiring constantly, until chicken is lightly browned. Stri in 3 cups water and next five dry ingrediants, reduce heat, and simmer.

Place two cans of beans in a blender, add broth, and process until smooth.

Stir in bean puree, remaining 2 cans of beans, corn, and Rotelle. Bring to a boil and reduce heat for 30 min. Stir in lime juice just before serving.
