Couscous Salad
ingredients
- 1 box plain couscous, whole wheat if possible, cooked to package directions
- 1 can chickpeas, drained and rinsed well
- 1 red bell pepper, chopped
- 1/2 Vidalia onion, chopped (or red or 5 green onions)
- 1 English cucumber, peeled, seeded and chopped
- 1 large tomato chopped or 1/2-1 pint of cherry tomatoes
- 1/4 cup chopped flat-leaf parsley
- 1/2 cup crumbled feta
- Salt and pepper to taste
- 2-3 lemon, juiced
- 1/4 cup extra virgin olive oil
- 1 garlic clove, minced
directions
Combine vegetables, chickpeas and cooked couscous in large bowl. Wisk lemon juice, garlic and olive oil together and pour over couscous. Season with salt and pepper.
