Stuffed Pasta Shells
ingredients
- 1 box jumbo pasta shells
- 2-3 cups chopped fresh spinach
- 1 zucchini, grated
- 12-16oz ricotta cheese
- 1 1/2 tsp oregano
- 1/2 cup Parmesan cheese
- 1 can slice mushrooms (optional)
- salt and pepper
- 1-2 jars spaghetti sauce
- 1 large bag shredded mozzarella

Preheat oven to 350.

Boil pasta shells until just tender and drain (they will cook longer in oven).

Mix spinach, grated zucchini, ricotta, oregano, Parmesan, mushrooms, salt and pepper together in large bowl. Stuff mixture into cooked shells and place in greased casserole dish.

Pour spaghetti sauce over shells and cover loosely with foil.

Bake for 20 minutes, uncover and top with mozzarella. Bake another 10-12 minutes.
