Vegetarian Chili
ingredients
- 2 Tablespoons olive oil
- 1 cup onion, chopped
- 1/2 red pepper,chopped
- 1/2 green pepper,chopped
- 3 cloves garlic,minced
- 3 tsp chili powder
- 1/3 cup Bulgar wheat
- 1 (28oz) can crushed tomatoes
- 1 can baked beans, with liquid
- 1 (15oz) can petite cut tomatoes
- 1 (15 oz) can black beans,drained and rinsed
- 1 (19 oz) can red kidney beans,drained and rinsed
- 1 Tablespoon oregano
- 1 (4oz) can diced,peeled green chilies
- 1 tsp black pepper
- 1 Tablespoon chopped fresh parsley

1. Saute onion, red and green pepper, garlic, chili powder and oregano in olive oil. Cook until onion is tender.

Add tomatoes,green chilies and Bulgar.

2. Heat to boiling; reduce heat to low. Cover and simmer 15 min. Add beans and simmer, covered another 25-30 min. Stir occassionally. Adjust seasoning if necessary.
