- 4 1/2 ounces bow tie pasta
- 4 cups cauliflower florets
- 1 cup sliced carrots
- 12 cherry tomatoes - halved
- 5 pitted small ripe olives, halved
- 3 tbsp reduced calorie Italian dressing (6 calories per tablespoons
- 1 1/2 ounces reduced fat cheddar cheese diced
- 1 ounce beef salami chopped

Microwave cauliflower with 1/4 cup water, covered, on high for 7 minutes.

Shock in an ice bath to stop cooking.

Microwave carrots with 2 tbsp water in microwave for 3 minutes. Shock to stop cooking.

Mix all veggies in bowl with dressing and add the cheese and salami on top.
