Creamed Corn with Bacon
ingredients
- 3 slices bacon, diced
- 2 Tbsp unsalted butter
- 1/2 onion, diced
- 6 ears corn, kernels removed (about 4 cups)
- 1/4 tsp salt
- 1/8 tsp cayenne pepper (optional)
- 1 1/2 cups heavy cream
- 1/4 cup whole milk

In a small saute pan, fry bacon over medium heat until crisp, about 5 minutes. Remove from pan & reserve.

In a large skillet, melt butter over medium heat. Add onion & saute until translucent, 3-4 minutes. Stir in cooked bacon bits, then gently stir in corn, salt & cayenne. Add cream & milk & bring to a gentle boil, stirring to prevent burning. Reduce heat to low & simmer, uncovered, until corn takes on a creamy texture, about 30 minutes.
