Plum Dandy
This is a delicious recipe I uncovered while looking for things to make with the hundreds of plums we picked off our plum tree every fall. Sadly, the tree is gone. But this recipe brings back great memories.
ingredients
- 1 stick butter, at room temperature
- 1 c. sugar
- 1 c. flour
- 1 tsp. baking powder
- 1/8 tsp. salt
- 2 large eggs
- 12 purple plums, pitted and halved
- Topping:
- 1 Tsp. sugar
- 1 Tsp. ground cinnamon
- 1 Tsp. fresh lemon juice

Preheat oven to 350 degrees.

Cream butter and sugar. Thoroughly blend in flour, baking powder, salt and eggs. Spoon batter into a 9-inch springform pan.

Place plum halves skin side up on top of batter. Set aside.

Next, combine sugar and cinnamon. Sprinkle evenly over plums, then drizzle with lemon juice.

Bake 1 hour.

Cool slightly, then remove from pan. Serve warm with vanilla ice cream or sweetened whipped cream.
notes
I like to add about 1 Tsp. almond flavoring to the batter. And, I usually drizzle the plums with a little bit of honey.
