ASIAN: Orange Flavored Chicken
ingredients
- 1 tbs soy sauce
- 1 tbs rice wine
- 2 tsp cornstarch
- 1 1/2 tsp minced fresh ginger
- 1 tsp sesame oil
- 1 lb boned and skinned chicken, cut into 1/2 inch cubes
- 2 tsp minced fresh orange peel
- 2 tbs chicken stock
- 1 1/2 tbs soy sauce
- 1 tbs rice wine
- 2 tsp cornstarch
- 1 tsp sesame oil,
- pinch of pepper
- 1/4 c. peanut oil
- 2 tbs peanut oil
- 6-8 snow peas
- cooked rice

Combine first five ingredients in small bowl. Add chicken and marinate at room temperature at least 30 minutes, stirring occasionally

Soak orange peel in enough water to cover, about 5 minutes. Drain and set aside

Combine stock, soy sauce, rice wine, cornstarch, sesame oil and pepper in another small bowl and mix well. Set aside

Heat 1/4 c.peanut oil in wok. Drain chicken. Add to wok in small batches and stir fry until cooked through, about 2 minutes, adding more oil if necessary. Remove with slotted spoon and set aside.

Wipe out wok. Heat 2 tbs peanut oil with orange peel and stir fry 1 minute. Return chicken to wok with snow peas and soy mixture and stir fry 3 minutes. Serve immediately with rice.
