CHICKEN: Pecan Chicken

ingredients
- 4 boneless, skinless chicken breast halves,
- 1/3 c. flour,
- l tsp ground Ancho chili,
- 3 eggs,
- 3/4 crushed pecans,
- 1/3 c. breadcrumbs,
- 2 tbs olive oil

1. With a meat tenderizer, flatten the chicken breasts between 2 pieces of plastic to about 1/4” thick.

2. Mix together flour, chili powder, salt and pepper. In separate bowl beat eggs. In third bowl, mix pecans and breadcrumbs. Dredge the chicken in the flour mixture, dip in egg, then dredge in pecan mixture.

3. In a large saute pan over medium heat, saute the chicken breast in hot oil until golden brown, turning only once. Cook about 2-3 min per side.
