Shrimp Fiji

ingredients

  • 1 c. orange juice,
  • l c. dry white wine,
  • 1/2 c. honey,
  • 1 1/2 tsp grated fresh ginger,
  • 6 tbs clarified butter,
  • 12 garlic cloves, crushed,
  • 36 med uncooked shrimp,
  • l tbs grated fresh ginger,
  • l c. slivered almonds
  • freshly cooked rice

    1. Combine orange juice, wine, honey and 1 1/2 tsp ginger in small bowl. Set aside.

    2. Heat butter with garlic in wok or large skillet until butter is bubbly. Add shrimp and l tbs ginger and saute briefly. Stir in almonds and continue cooking until almonds are golden and shrimp are cooked through. With slotted spoon, remove shrimp, garlic and almonds to heated platter. Pour off excess butter from skillet. Return skillet to burner and heat briefly. Add orange mixture and bring to boil. Reduce heat and simmer l min. Return shrimp mixture to skillet and heat through. Serve immediately over rice.
