Spinach Chicken Salad
ingredients
- For the salad:
- 5 cups cubed cooked chicken (3 whole breasts)
- 2 cups green grape halves
- 1 cup snow peas
- 2 cups packed torn spinach
- 2 1/2 cups sliced celery
- 7 oz. corkscrew pasta, cooked and drained
- 1 jar (6 oz) marinated artichoke hearts, drained and quartered
- 1/2 large cucumber, sliced and halved
- 3 green onions with tops, sliced
- For the dressing:
- 1/2 cup olive oil
- 1/4 cup sugar
- 2 tablespoons white wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon dried minced onion
- 1 teaspoon lemon juice
- 2 teaspoons minced fresh parsley
directions
Mix salad ingredients together. In a separate container, mix dressing ingredients together; toss all together and serve.
notes
I'm suspicious about the dressing proportions. It's a little too much oil and too much sugar compared to how I make a vinaigrette. Mom noted that she only adds 2 tablespoons of oil, so I would use caution with the proportions on the dressing.
