Neha's Thai noodles in Peanut Sauce
ingredients
- 2 cups rice noodles
- 1 cup brocolli (optional)
- 1 tsp. ginger, grated
- 2 cloves garlic, chopped
- 1 cup tofu, cut into pieces (or chicken!)
- 4 small onions, peeled and halved
- 1 tbsp. soy sauce
- 1/2 cup bean sprouts
- 1 tbsp. lemon juice
- 2 tbsps. roasted peanuts
- 1 tbsp. oil
- salt to taste
- Sauce ingredients:
- 2-3 tbsp. lemon juice
- 2 tsp. soy sauce
- 4 tbsp. castor sugar
- 4 tbsp. peanut butter
- salt to taste

1)Heat oil in a wok. Add ginger, garlic, tofu, brocoli, onions and soy sauce. Saute until the onions brown.

2)Add noodles, bean sprouts, lemon juice and salt. Mix well.

3)Place on dish and sprinkle with chopped peanuts.

4)To make sauce, in pan, combine all sauce ingredients with 1/2 cup water and bring to boil.

5) Serve noodles and sauce side by side. And enjoy!
