Chunk's Spinach Artichoke Dip
A TJU Classic!
ingredients
- 1 Tbs olive oil
- 1 Tbs butter
- 2-5 cloves of finely chopped garlic
- 1 block of cream cheese
- 16oz sour cream
- 1/2 -1 packet french onion soup mix
- 2 box thawed frozen chopped spinach
- 10 oz (or 2 small jars) marinated artichokes, chopped
- 1-2 cups Parmesan cheese (Locatelli, Of course)
- salt & pepper to taste
- Bread loaf (pumpernickel or rye)
directions
Heat oil and butter in large pot. Saute garlic in oil and butter ~1 min, do not burn. Add sour cream and cream cheese. Heat to combine ~7 min. Add soup mix and combine ~2min. Squeeze excess water from thawed spinach and add to mixture. Add chopped artichokes (can add Tbs of marinated brine for taste if desire). Let mixture combine another 5 min. Add Parmesan cheese and cook for additional 4 min, stirring frequently. Add salt/pepper to taste. Hollow out bread bowl and save bread pieces for dipping. Serve dip warm and sprinkle some Parmesan cheese on top to finish. Enjoy!
