Tonya's Salsa
ingredients
- Big bag of Roma tomatoes
- variety of peppers, jalapeno, serrano, whatever you can find
- 1/2 bunch of cilantro
- 1 sweet onion
- red wine vinegar
- limes or lime juice
- seasoned salt
- fresh ground pepper
- 2 cloves garlic

Roast or barbeque the peppers that you find. When cool take off the end and blend in your blender or food processor. set aside

Into food processor, put 1/2 bunch of cilantro, garlic, a squirt of red wine vinegar, some lime juice, onion cut in chunks, some salt and pepper. Blend it all til it’s nice and pureed.

Put into big bowl.

Trim the end off the tomatoes and put in blender pureeing each batch and adding it to the cilantro mixture in the bowl. Mix it up.

A spoonful at a time add the roasted pepper puree and taste it after each addition. When you almost reach the right hot-ocity let it sit for a while. Then taste it again. Add more salt and pepper if needed or more pepper mix. Any extra pepper stuff put in little bowls and freeze. When they’re frozen pop them out and store in zip lock bags for the next batch.
