Homemade Mayonnaise
This is basically an aioli and a healthy way to have a decadent sammy spread or dip. Olive oil falls in the “good fat” category, and omega-3 eggs actually have cholesterol fighting properties!
ingredients
- 2 large omega-3 egg yolks
- 1 tbsp dijon mustard
- 1-2 tbsp lemon juice
- 1/2 cup extra virgin olive oil
- 1 tsp salt
- 1 clove grated garlic (optional)
- 1 tsp chili powder (optional)
- 1 tbsp wasabi (optional)

Add all ingredients except olive oil to food processor for 20 seconds. Slowly drizzle olive oil in to create whipped and fluffy consistency.

Add any of the optional ingredients for a flavored mayonnaise.
