WATERMELON, FETA AND OLIVE SALAD
I love to serve this with grilled lamb chops.
ingredients
- 3 CUPS LOOSELY PACKED ARUGULA
- 1 CUP LOOSELY PACKED FLAT LEAF PARSLEY
- 1 CUP LOOSELY PACKED TORN MINT LEAVES
- 2 LB SEEDLESS WATERMELON, RIND REMOVED AND CUT INTO 1 INCH CUBES
- 20 KALAMATA OLIVES SMASHED, PITTED AND HALVED
- 1 JALENPENO, STEMMED AND SEEDED JULIENNED(OPTIONAL)
- 1/4 SLICED RED ONION , SOAKED IN ICE WATER FOR 30 MINUTES (I USUALLY OMIT THE ONION)
- 4 OZ. FETA CHEESE CRUMBLED
- 2 TBS. EXTRA VIRGIN OLIVE OIL
- 2 LIMES HALVED
- COARSE SEA SALT AND FRESHLY GROUND PEPPER TO TASTE

IN A LARGE BOWL TOSS TOGETHER THE ARUGULA, PARSLEY, AND MINT.

DIVIDE GREENS BETWEEN 4 PLATES

IN A MEDIUM BOWL TOSS THE WATERMELON, OLIVES, JALAPENO, AND ONION.

SPOON MIXTURE OVER GREENS. SPRINKLE WITH THE FETA AND DRIZZLE WITH OLIVE OIL. SQUEEZE A LIME HALF OVER EACH SALAD, SPRINKLE WITH SALT AND PEPPER
