POTATOES: Stuffed Baked Potatoes

ingredients
- 2 large baking potatoes,
- 1/4 c. sour cream,
- 8 tsp grated romano cheese,
- 4 slices crisply fried bacon,
- drained and crumbled,
- 4 tsp minced green onion,
- salt and pepper,
- 4-8 pats of butter,
- minced fresh parsley,
- paprika

1. Preheat oven to 425F/220°C. Bake potatoes 45 minutes. Remove from oven and reduce heat to 350F/180°C. Cut each potato in half horizontally and gently scoop pulp into small bowl, reserve skins. Add sour cream, 4 tsp cheese, bacon and onion and mix with fork until well blended but not mashed. Add salt and pepper to taste. Fill

2. Add 1-2 pats butter to each half and top with sprinkling of parsley and paprika
