POTATOES: Stuffed Baked Potatoes

ingredients

  • 2 large baking potatoes,
  • 1/4 c. sour cream,
  • 8 tsp grated romano cheese,
  • 4 slices crisply fried bacon,
  • drained and crumbled,
  • 4 tsp minced green onion,
  • salt and pepper,
  • 4-8 pats of butter,
  • minced fresh parsley,
  • paprika

    1. Preheat oven to 425F/220°C. Bake potatoes 45 minutes. Remove from oven and reduce heat to 350F/180°C. Cut each potato in half horizontally and gently scoop pulp into small bowl, reserve skins. Add sour cream, 4 tsp cheese, bacon and onion and mix with fork until well blended but not mashed. Add salt and pepper to taste. Fill

    2. Add 1-2 pats butter to each half and top with sprinkling of parsley and paprika
