Orzo with Shiitkes, Caramelized Onions and Spinach
This is a great side dish or a light dinner.
ingredients
- Kosher Salt
- 3 Tbl soy sauce
- 1 Tbl rice vinegar
- 1 tsp toasted sesame oil
- 5 Tbl vegetable oil
- 2 cloves garlic, smashed
- 1 Tbl grated garlic
- pinch crushed red pepper flakes
- 6 oz shiitake mushrooms, stemmed, cleaned and thinly sliced
- 2 Tbl dry sherry or white wine
- fresh pepper
- 1 large onion, finely diced
- 10 oz spinach, (or chopped frozen)
- 1 lb dried orzo
- 2 scallions, white and green parts, thinly sliced
- 1 tsp toasted sesame seeds
- 1 lime, cut into small wedges
