BEANS: Molasses Baked Beans

ingredients

  • l lb small white beans,
  • 2 bay leaves,
  • l large onion, cut into 6 wedges,
  • 3 1/2 oz salt pork, sliced 1/4 „ thick,
  • 3/4 c. ketchup,
  • 1/2 c. brown sugar,
  • 1/4 c. mild light molasses,
  • l tsp mustard,
  • l tsp pepper

    1. Place beans in large bowl. Add enough water to cover by inches. Let stand overnight. Drain well. Combine beans and bay leaves in lEFW saucepan. Add enough water to cover beans by 3inches Boil gently until beans are just tender, stirring occasionally, about 45 min. Drain beans and reserve 4 c. cooking liquid.

    2. Preheat oven to 350F/180°C. Combine onion, salt pork, ketchup, sugar, molasses, dry mustard and pepper in large ovenproof pot. Stir in beans and 3 c. cooking liquid. Cover pot tightly with aluminium foil, then with lid. Bake until beans are very tender and liquid is almost absorbed, adding more cooking liquid if necessary, about 2 1/2 hrs. Season with salt and pepper.
