Shrimp Amandine

ingredients

  • 1/2 c. sliced almonds,
  • 2 tbs butter,
  • 3/4 pound cleaned med. shrimp,
  • l3 3/4 oz chicken broth,
  • 10 oz frozen peas,
  • 1/2 tsp dillweed,
  • 1/2 tsp salt,
  • 1/4 tsp pepper,
  • l 1/2 c. dry rice,
  • 1/2 c. pimientos

directions

    1. Saute almonds in butter until lightly browned. Add shrimp and saute about 5 minutes until shrimp are pink.

    2. Add broth, vegetables and seasonings. Bring to a full boil

  • 3

    3. Stir in rice and pimientos. Cover and remove from heat. Let stand for 5 minutes. Fluff with fork.
