Shrimp Amandine
ingredients
- 1/2 c. sliced almonds,
- 2 tbs butter,
- 3/4 pound cleaned med. shrimp,
- l3 3/4 oz chicken broth,
- 10 oz frozen peas,
- 1/2 tsp dillweed,
- 1/2 tsp salt,
- 1/4 tsp pepper,
- l 1/2 c. dry rice,
- 1/2 c. pimientos

1. Saute almonds in butter until lightly browned. Add shrimp and saute about 5 minutes until shrimp are pink.

2. Add broth, vegetables and seasonings. Bring to a full boil

3. Stir in rice and pimientos. Cover and remove from heat. Let stand for 5 minutes. Fluff with fork.
