Mexican Red Rice

ingredients

  • 1 1/2 c. long grain rice,
  • l c. plum tomatoes, diced,
  • 2 cloves garlic, minced,
  • 1/4 white onion chopped,
  • 1/4 c. corn oil,
  • 29oz chicken broth,
  • 1/3 c. carrots, diced,
  • 1/3 c. frozen zucchini, diced,
  • 1/3 c. frozen baby peas,
  • l small zucchini diced,
  • l tsp mild red new mexico chili powder,
  • 1/2 tsp kosher salt

    1. Soak the rice in very hot water for 10 minutes. Drain the rice and rinse in cold water. Let all excess water drain off,

    2. In a blender process the tomatoes, garlic and onion until smooth. Lightly brown the rice in the oil in a large frying pan over med high heat. Stir often and do not let stick. Add tomato mixture and continue to cook for about 7 minutes, continue stirring. Stir in broth, vegetables, chili powder and salt, mix. As soon as the rice comes to a boil turn heat to low and cover for 20 min. Stir before serving.
