ingredients

  • 1 medium onion, chopped,
  • 2 tsp oil,
  • l can (13 3/4 oz) chicken broth,
  • l large red green or yellow pepper, sliced in thin strips,
  • l 1/2- 2 tsp chili powder,
  • 1/2 tsp thyme leaves,
  • 1/4 tsp paprika,
  • 1/8 – 1/4 tsp cayenne pepper,
  • l 1/2 c. dry minute rice.

    l. Saute onion in oil until tender

    2. Add broth, pepper, chili, thyme,paprika and cayenne pepper, bring to a boil

    3. Stir in rice. Cover, remove from heat and let stand 5 min. Fluff with a fork. Makes 4 servings.
