Späetzle
ingredients
- 150 g flour
- 1/2 tsp salt
- 1 tsp black pepper
- 3 eggs
- 5 tblsps milk
- 15 g fresh minced chives, parsley, & thyme
- 2 tblsps butter
- Zest of 1 lemon

• Place flour, salt & pepper in a bowl and blend with a whisk. In another bowl, whisk the eggs and milk together. Whisk this mixture into the dry ingredients until smooth and homogenous, and then mix in herbs.

• Bring a marmite half filled with salted water to a boil, and place a perforated hotel pan or large-holed colander over the mouth. Pour a portion of the batter into the pan and push it through the holes with the aid of a rubber spatula.

• Let späetzle simmer for 1 minute and then scoop out with a spider into a bowl of ice water. Let cool, and then drain and pat dry.

• At service time, heat the butter to the noisette stage and sauté the pasta until light golden, seasoning lightly and adding the zest at the end.
