Stuffed Manicotti
ingredients
- SAUCE:
- 2 tbl oil
- 2 35 oz. cans plum tomatoes,
- drained/broken
- 1/4 tsp salt
- 1 1/2 tsp minced garlic
- 2 tsp basil
- 1/8 tsp pepper
- FILLING:
- 1 1/2 lbs sausage
- 2 lb.. ricotta cheese
- 2 tbl parmesan cheese
- 1 egg
- 16 shells cooked firm
- 2 cups mozzarella, shredded

Heat oil and cook garlic until golden brown. Add remaining sauce ingredients and bring to a simmer. Reduce heat and simmer uncovered stirring often for 20 minutes until slightly thickened.

Remove sausage from casings and brown over medium heat. Drain fat and put in a bowl. Let stand 5 minutes until slightly cool. Add ricotta, parmesan and egg, mix with wooden spoon until blended. Put sauce in bottom of pan, fill shells, cover with foil and bake @ 375° for 30 minutes; uncover and sprinkle with mozzarella and bake uncovered for 15 minutes longer.
