Whole Lotta Nuts Granola
Bekki’s fave granola recipe that she got from Cathy Barrow, friend and landscaper - Washington, DC 2005
ingredients
- 3 C. rolled oats (not instant)
- 1/2 c. slivered almonds
- 1/4 c. sesame seeds
- 1/2 c. walnut pieces
- 1/2 c. pecan pieces
- 1/2-3/4 t. cinnamon
- 1/2 t. salt (or less)
- 1/2 c. unsweetened flaked coconut*
- 1/4 c. pumpkin seeds*
- 1/4 c. sunflower seeds (or pine nuts*)
- 4 T. unsalted butter or olive oil
- 1/4 c. honey
- 1/2 t. vanilla
- 1/2 c. raisins
- 1/2 c. dried berries
- These are ingredients I don’t usually include.

Preheat oven to 325 degrees F.

Melt butter/oil and honey. Stir oats and nuts/seeds together. Pour butter-or-oil/honey mixture over oat mixture and stir until combined.

Spread on large baking sheet lined with parchment paper. Cook 20 minutes or less, watching that it doesn’t get too browned.

Stir in fruits and let cool completely.

Store in airtight container.
