Summer Squash
This dish is a marriage of summer squash and bacon. Easy and delicious. My Grandma & Grandpa Johns always had a huge garden during the summer (aka: truck patch). They grew enough vegetables and melons to feed a small army. This recipe reflects my memories of summer squash from Grandma garden.
ingredients
- 3 medium size zucchini
- 3 medium size yellow squash
- 5 slices of thick cut bacon
- Pepper to taste

Assemble and pre-measure all ingredients.

Wash and trim squash then cut into quarters. Cut away the small seed section on each quarter. Slice into 1" diagonal pieces.

Into a skillet, fry the bacon to the crisp stage. Add squash to the skillet and cook on medium heat for about 7 minutes. Add pepper to taste. Do not add salt, as it will release too much water into the pan. Squash should be tender but still firm. Salt at the table as desired.

The Bandoni's lived across the street from my Grandparents and they would often get some squash. Mrs. Bandoni would use it in a carbonara dish (also in this book under Pasta).
