South West Brunch Bake
Start this when you get up and get in the fridge for the 2 hours and enjoy your morning coffee, and perhaps some morning chores. Once you’ve worked up a hunger have brunch!
ingredients
- 4 Cups frozen shredded hash browns
- 15 oz can of black beans- Rinsed & drained
- 1 cup of frozen whole kernal corn
- 1 red pepper chopped
- 1/2 cup of chopped onion
- 2 cups shredded monterey jack cheese
- 2 tbsp chopped fresh cilantro
- 8 eggs
- 1 1/4 cups of milk
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
directions
Spray 7x11 (18x28 cm) Baking dish, with pam. Mix potatoes, beans, corn, red pepper, & onion in dish. Sprinkle with cheeseand cilantro. Beat the eggs, milk salt and cayenne pepper until well blended. Pour evenly over potato mixture. Cover refridgerate at least 2 hours, but no longer than 24. Heat oven to 350and bkae uncovered, for 55-60 mins - or until inserted knife comes clean. Let stand 5 mins before cutting. Serve with sliced fresh tomatoes, and or salsa, and bacon.
