Cranberry Raisin Nut Bread
Great Holiday bread
ingredients
- 1.5 cups all purpose flour
- 3/4 cup packed light brown sugar
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup coarsely chopped fresh cranberries
- 1/2 cup golden raisins
- 1/2 cup coarsely chopped pecans
- 1 tbs grated orange peel
- 3/4 cup milk
- 2 eggs
- 3 tbs butter, melted
- 1 tsp vanilla
- Cranberry-Orange Spread (recipe follows)

Preheat oven to 350 and great loaf pan.

Combine flour, brown sugar, baking powder, baking soda, cinnamon and nutmeg in large bowl. Stir in cranberries, raisins, nuts and orange peel. Mix milk, eggs, butter and vanilla in small bowl until combine; stir into flour mixture just until moistened. Spoon into prepared pan.

Bake 55 to 60 minutes or until wooden toothpick inserted into center comes out clean. Cook in pan 15 minutes. Remove from pan and cool completely on wire rack. Store tightly wrapped in plastic wrap at room temperature. Serve with Cranberry-Orange Spread if desired.

1 12 oz container cranberry-orange relish

3/4 cup chopped pecans

Combine all ingredients until well blended. Store in refrigerator.
