Mom's much requested spaghetti sauce
After many years of tweeking, I think this may be the final one!!
ingredients
- 2 Tbsp. olive oil
- 1 very large onion (about 2 cups)
- 1 cup fresh parsley or 2-4 Tbsp. dried
- 6 cloves garlic, chopped (or can use garlic pwdr)
- 2 lbs ground beef
- 1 large can (Costco size!) tomato puree
- 2 8 oz cans tomato sauce
- 2 cans tomato paste
- 2 cans tomatoes, put through blender and strain through fine sieve (I use juice only)
- sugar 4-5 Tbsp. or to taste
- 4 tsp dried basil
- 3 tsp salt
- 1/2 tsp pepper
- 2 tsp dried oregano

In very large pot, heat oil and when hot, add onion, garlic and parsley (if fresh) and cook unitl onion is softened. Add beef, brown.

Add rest of ingredients and stir. Reduce heat to simmer and let it cook for at least 1 hour. Even better if cooked longer!!!

My sauce is never the same...sometimes I add things, sometimes I don't have all the ingredients and I improvise. Let it be fun!!!
